Ingredients
  1. 2 Tbsp. 7UP®
  2. 2 Tbsp.olive oil
  3. 1/2 tsp. cumin
  4. 4 cloves minced garlic
  5. 1/2 tsp. salt
  6. Fresh cracked pepper
  7. Lime zest from 1 lime
  8. Fresh lime juice from 1 fresh lime
  9. 1/2 onion chopped
  10. 1/2 bunch chopped cilantro leaves
  11. 6 chicken drumsticks
  12. 3-4 limes for garnish and juice
Instructions
  1. Combine the 7UP®, olive oil, minced garlic, cumin, salt, and cracked pepper in a bowl.
  2. Use a zester or cheese grater to add the zest of one lime. Squeeze the lime to add the juice.
  3. Add 1/2 of the chopped cilantro leaves. Save the other half to add after baking.
  4. Pour the marinade into a gallon size zip top bag.
  5. Add the chicken to the bag. Zip the top tightly.
  6. Refrigerate for at least 30 minutes. You can leave this for longer if desired.
  7. Preheat the oven to 400 degrees.
  8. Load the chicken into a casserole dish. Pour the remaining marinate over the chicken.
  9. Bake the chicken for 40-45 minutes basting occasionally.
  10. Broil at the end and brown as preferred.
  11. Garnish the chicken with the remaining cilantro leaves and lime slices.
