Healthy, Yummy, Spicy Chicken


Oh Boy!


Did I ever pull an oopsie-daisy yesterday!

Apparently, if you create a new playlist and press the wrong button,

the playlist becomes a post and your website announces it to the world!

I just about died!

I couldn’t figure out how I had done it.

when it posted, I was in a theater watching

Hunger Games!

{side track: such an awesome movie! did you guys like it???}

I actually wondered how my computer had gotten a mind of it’s own.

{it REALLY messed me up at first! lol}

then I remembered pressing a wordpress button and typing in my info…

I had never done it that way before and I actually thought it hadn’t worked

so I had copied the code and added the playlist to my site the correct way.

I had completely forgotten trying the other way first.

I apologize to everyone.

once again, thank you for putting up with my learning curve.

and for excepting me even though the truth is

I am not perfect. :)

{not even going to pretend to be}

Many days I have Laundry in baskets.

Enough for my kids to get lost in…hehe :)

and most of the time when I am posting or working on a post,

I look like this

{no make-up} and most likely in sweats or pajamas as well.

Plus, I don’t always finish my projects.

In fact, I still have a section of the floating shelves

{from my floating shelves post}

on the other side of my desk I need to finish.

{don’t worry. I will. even if it takes me a couple of years…hehe…*blush*blush*}

and the real reason that you didn’t see all of my living room in

the Spring Floral post is because all of the lumber for the floating shelves

was on the floor!  {for…wait for it… almost two weeks!!!!! oh my…lol}

And for my last confession of the day…{drum-roll please!!!!!}

because I have 5 kids…I ALWAYS have to clean before taking a picture

and I have honestly not used pictures I have taken before

because there was to much visible dust {yes dust} in the picture. :) :) :)

I know that no one is perfect and I LOVE the variety of people in this world

but I am grateful that  you guys put up with little ol’ me and except me for who I am.

I promise, I will always return the same respect to you

& love you for who you are as well.

Okay, Now let’s get down to brass tacks.

Healthy, Yummy, Spicy Chicken

First, boil the chicken.

Cube the chicken and place it into a bowl.

Collect your ingredients.

Dump everything into the bowl.

Mix Well.

Serve on rice.  I used brown but you can use whatever you would like.

This is a wonderful thick tomato sauce with an amazing Cajun zing.

It has so much flavor, you will never know that it is good for you as well!


Healthy, Yummy, Spicy Chicken

 Healthy, Yummy, Spicy Chicken Recipe
Dinner, Healthy, Spicy, Chicken, Rice, Olive oil, Brown, Tomato paste
  • 1 pound cooked, cubed chicken
  • 2 cloves garlic, minced
  • 3 Tbsp. tomato paste
  • 1 tsp. basil
  • 1/2 tsp. red pepper
  • 1/4 tsp. red win vinegar
  • 1/2 tsp. salt
  • Combine and serve over rice. This also re-heats EXTREMELY well.

I felt really blessed today, I got to share the chicken with my sister and a few of her cute babies.

We had a really good time. 

Her kids are so fun and adorable!  I could be partial but I doubt it…hehe.

I just love them :)
