One of my very favorite things about summer is fresh salsa & salads…they just taste better in the sun. :) I honestly look forward to them every year.
One of my true loves is mango salsa. It tastes great with just chips or on fish & it so very easy..
I thought that since I love it so much, you just might too!
- 2 whole mangoes
- 1/2 a red onion
- 1 whole jalapeno pepper
- 1 English cucumber
- 1/2 a bunch of cilantro (1/3-1/2 c. chopped)
- the juice of one lime (approx. 1 Tbsp.)
- salt & pepper to taste
- Peel everything as needed. Hand chop or use a food processor or a Vitamix to chop and combine your ingredients. Season to taste. Serve with corn chips. Enjoy!
