7UP® Strawberry Rhubarb Crisp

  1. 1 cup all-purpose flour
  2. 3/4 cup old fashioned rolled oats
  3. 3/4 cup packed light-brown sugar
  4. 1/4 tsp salt
  5. 10 Tbsp unsalted butter, cold and diced into small pieces
  6. 1/8 cup 7UP®
  7. 1 tsp. vanilla extract
  8. 1 1/2 lbs fresh strawberries , stemmed and sliced
  9. 1 lb fresh rhubarb , sliced
  10. 3/4 cup granulated sugar
  11. 2 tsp orange zest
  12. 1/8 cup orange juice
  13. 2 Tbsp cornstarch
  1. Preheat oven to 400 degrees.
  2. Combine the flour, old fashioned rolled oats, packed light-brown sugar, and salt. Stir.
  3. Add butter and stir again. Set aside.
  4. Combine the 1/8 cup 7UP®, vanilla extract, strawberries, rhubarb, sugar, orange zest, orange juice, and cornstarch.
  5. Spoon into a casserole dish or individual serving dishes.
  6. Sprinkle the crisp over the top.
  7. Bake in preheated oven 40 - 45 minutes (20-25 minutes for individual dishes) until juices are bubbling and crisp is golden brown
  1. Serve with vanilla bean ice cream or fresh whipping cream.
