Classic Cheese Fondue

  1. 1 garlic clove
  2. 2/3 cup dry white wine
  3. 1 Tbsp lemon juice
  4. 10 oz. Gruyere cheese grated
  5. 1 Tbsp cornstarch
  6. 1 tsp. mustard powder
  7. 3 Tbsp kirsch pepper
  1. Rub the inside of the fondue pot with garlic, then discard.
  2. Pour the wine and lemon juice into the fondue pot and bring to a boil on the stove, then reduce the heat so that the liquid is simmering.
  3. Gradually add the Emmental and Gruyere, stirring constantly, until all the cheese is combined.
  4. Blend the cornstarch, mustard powder, and kirsch and add to the fondue. Cook gently for 2-3 minutes, then season to taste with pepper.
  5. Transfer the fondue pot to its tabletop burner and serve with the wrapped sausages and cubes of bread.
