we decided that we needed to take a trip up to the mountains

& capture a few pictures of the beautiful Aspens in all of their Fall glory.

We decided it would be the perfect setting for a romantic dinner for two.

We chose Fall colors for our theme and threw in some turquoise to make it all pop.

It looked amazing against the backdrop of of the Autumn leaves…

We Served Apple Beer & Pot Pies from KFC of all places…

{they not only look amazing, they also taste delightful!  You should try them…}

We also served Yummy Candy Apples.

the recipe uses Jello of all things

& it is completely addicting.

Katrina even started dipping other items besides apples in it.

The crazy part is, it all tasted good! lol

Jello Candy Apples

Ingredients
  1. Cooking spray
  2. 2 c. granulated sugar
  3. 3/4 c. water
  4. 1/2 c. light corn syrup
  5. 1 pkg strawberry or cherry jello
  6. 16 drops red food coloring
  7. 6 medium Granny Smith apples
  8. 6 wooden sticks
Instructions
  1. Line a cookie sheet with parchment paper. Spray the paper with cooking spray.
  2. Insert a wooden stick half way through each apple.
  3. In a medium pan combine the sugar, light corn syrup, water. Bring to a boil. Add the food coloring and jello. Boil 20-30 minutes, until it reaches 300-301 on a candy thermometer.
  4. Coat the apples in the candy mixture and place them on the cookie sheet to cool.
