Completely Whole Wheat Vintage VitaMix® Bread
Completely whole wheat, extremely healthy for you VitaMix® bread like my grandma used to make. You will need to have a metal Vintage VitaMix® 3600 for this recipe.

  1. 2 c. hard western wheat
  2. 1 1/4 c. tap water (as it comes from the tap)
  3. 1 tsp. salt
  4. 1 Tbsp. dry yeast
  5. 1 Tbsp. honey
  6. 1 Tbsp cooking oil
  1. Add the wheat to the machine.
  2. Turn speed control knob to high.
  3. Use up and down action on impact lever a few times then leave it in the on position for one minute.
  4. Stop machine, remove the container, and tap it against a cutting board to loosen kernels.
  5. Return container to the base.
  6. Add the remainder of the ingredients to the machine, in order.
  7. Place the lid on the machine and clamp it on.
  8. Use the up down action lever rapidly until the dough stops moving.
  9. Remove the Action Dome and use a rubber spatula to clean the inside edges of the container. Remove the spatula.
  10. Use the action lever to create a down-release movement by quickly turning it on and off.
  11. The dough will form a ball Above the blades.
  12. Stop the machine and run a wet spatula under the dough, pushing it down in the middle.
  13. Repeat forming the ball and pressing it down at least 4 times. The more you do this, the lighter the bread.
  14. Grease a bread pan.
  15. With the dough in a ball, quickly turn the container upside down over the greased bread pan. The dough should fall out.
  16. Shape the dough into a loaf shape using a wet spatula.
  17. Cover with a wet cloth and allow to raise 1/2 an hr.
  18. Bake at 375 degrees Fahrenheit for 35 minutes.
  19. Remove immediately and cool on a rack.
  20. Butter the top crust if desired.
